Ingredients

  • 6 slices Kentucky Legend Bacon
  • 4 slices thick-cut white or sourdough bread, toasted
  • 2 ripe tomatoes, sliced
  • 4 leaves romaine or iceberg lettuce
  • 3 tablespoons mayonnaise
  • Salt and freshly ground black pepper to taste

Directions

  1. 1 Cook bacon in a skillet over medium heat until crispy, about 4-5 minutes per side. Transfer to a paper towel-lined plate.
  2. 2 Toast bread slices until golden.
  3. 3 Spread mayonnaise generously on one side of each toast slice.
  4. 4 Layer lettuce leaves on two slices of toast. Top with tomato slices and season with salt and pepper.
  5. 5 Add three strips of bacon to each sandwich.
  6. 6 Close sandwiches, cut diagonally, and serve immediately.
